Healthy Brownie Parfaits!

Hello friends! On April 29th this amazing little blog turned 1 year old! At first I wanted to do a birthday cake with candles and stuff, but these brownie parfaits turned out to be a much better idea. 

I like yogurt, but I really don’t love having it just plain and simple…I need toppings! So this little brownie bites are the perfect way of having yogurt as the yummy-est dessert/snack/breakfast in the world :)

Plus, my mom is coming to visit tomorrow and she LOVES chocolate. Seriously, she’s known in the family as the chocolate lover. You can easily find her hiding chocolate in secret places around the house to avoid my dad eating them. I totally get her…I would do the exact same thing if I lived with other chocolate lovers, good thing le boyfriend is not that into chocolate (but don’t judge him, he’s nice). So, I know this healthy chocolaty-y dessert will be perfect to welcome her and celebrate the blog’s 1 year anniversary. I hope you enjoy them as much as I did :)

Serves 8 portions, ready in 30 minutes


For the brownie
-1/2 cup whole grain flour
-1/5 teaspoon salt
-1/4 teaspoon baking soda
-1 egg plus 1 egg white
-1/2 cup brown sugar
-2 Tablespoons cocoa powder
-1/4 cup olive oil
-1/2 teaspoon vanilla extract
-1/2 cup dark chocolate chips

For the other layers:

Per portion:

-2/3 cup 0% plain Greek yogurt
-A splash of honey
-1 teaspoon roughly chopped walnuts
-2-3 strawberries


1. Preheat oven to 325◦F. Line a medium baking tray with parchment paper.
2. In a small bowl, add and mix the flour, salt and baking soda. Set aside.
3. In a separate medium bowl, whisk the eggs until they're frothy. Add the sugar, cocoa powder, oil and vanilla. Whisk until smooth.

4. Add the flour mixture and whisk until combined. Stir in the chocolate chips and mix with a spoon. The amount of mixture is not huge, that’s of because the brownie is not super thick.
5. Pour the batter onto the parchment paper on the baking tray.

6. Bake for 20 minutes or until a fork inserted in the middle comes out clean.
7. Remove it from the oven and cut it into 2cm squares (obviously it doesn’t have to be perfect)

To get it together:
1. Since the yogurt is unsweetened, I added a few drops of honey and mixed it well.
2. In a bowl or glass, add one layer of brownie, then yogurt, walnuts, strawberries and repeat. If you want pretty layers make sure you evenly distribute the ingredients (the brownie, yogurt, walnuts and strawberries). At the end I had about 7 brownie bites per portion.
