Overnight Oats - 3 topping ideas!

Life is getting complicated. I don’t think I realize it yet, but at the end of this year, if everything goes well, I will be finishing my bachelor’s degree in nutrition. That means I need to start working on my resident's visa, decide on what to do after I graduate, get a work permit, look for a summer job and basically study hard. As if that wasn't enough, this semester I’m taking that class every program has that is the “end of the world” and that “you’re definitely going to fail”. People are very encouraging, right?

In busy days (which seem to be always) I need (and you do too) meal ideas that are fast to prepare, yummy and healthy. It is not exactly my case, but many people complain about not having time for breakfast. Some dietitians and nutritionists would jump right now and shout at you: WHAAAAT!? BREAKFAST IS THE MOST IMPORTANT MEAL OF THE DAY! #cliché

Since I like being nice, I won’t shout at you, but I do believe that breakfast is super important in keeping the rest of the day’s meals under control. It’s an easy experiment, you can try it…compare your daily meals in a day in which you didn't have breakfast with one in which you did. Repeat this a few times, after a while you’ll notice that you eat better when you've had breakfast.

Today I’ll give you a great yummy healthy idea for those busy days in which you won’t have time for breakfast. You need less than 10 minutes the day before and that’s it!

-1/3 cup oats
-1/3 to ½ cup of milk (I used skim)
-1/4 teaspoon vanilla extract

Topping Idea #1: Honey, Apple & Walnuts
-1 teaspoon honey
-1/2 an apple
-1/4 cup walnuts

Topping Idea #2: Chocolate & Raspberry
-3/4 teaspoon cocoa powder
-1/2 cup raspberries

Topping Idea #3: Nut Butter & Banana
-1 teaspoon of nut butter (I used peanut)
-1/2 banana

1. In a jar or bowl, add the oats, milk and vanilla extract. Mix well and refrigerate overnight.
2. The next morning, top with your favorite topping, mix and enjoy!
