Healthy Crab and Avocado Wraps!

I can’t believe November is almost over. I mean, I feel like 2 days ago it was October and people were going pumpkin crazy (I included). Now everything I see is pomegranates everywhere. But, confession: I’ve never tried them. I don’t even know how to get them. Even worse...I’m not sure I can pronounce it. Can someone send me an audio note pronouncing it? Thanks. The disadvantages of not being a native English speaker.

Also, I find it cute that no one has ever corrected my grammar. I guess the important thing is that you all understand what I’m saying, right?

There are so many funny stories I could tell you about Raquel and other languages.  Like that time I said “Gracias” to someone at the bus because I was speaking in Spanish to someone on the phone and my brain didn't have time to switch to English yet.

Or when I’m at my boyfriend’s parents’ house and they all speak to me in French but I answer in Spanish because my French accent is so weird I'd rather save it to myself. Spanish is so simple and cool, let’s all speak Spanish ok? Ooookay

About these wraps…they are just healthy, delicious and so easy to take to school or work. They are also a great dinner idea. Enjoy them!

Serves 6 to 8, ready in 20 minutes

-300gr crab
-1 red bell pepper, chopped
-1 medium onion (or ½ a big one), chopped
-1/3 cup green onion, chopped
-1 big carrot, grated (about 1/3 to ½ cup)
-1 big ripe avocado
-3 tablespoons ricotta
-1/4 teaspoon salt
-Some greens
-6 to 8 whole grain tortillas

1. In a medium bowl add the chopped red bell pepper, onion, green onion and carrot. Mix well.

2. Add the avocado and mash it with the help of a fork. Add the ricotta, crab and salt. Mix everything together.

3. Fill the tortillas with the crab mixture and some greens.
4. Enjoy!
