So, it’s Octoberrrr! Everyone seems to be really happy about it. I get it...there’s beautiful colors everywhere, it’s pumpkin season and it’s starting to get a bit chilly. The only problem is that for some of us, October means exams and essays and exams and essays. Not fun. So now you will allow me to post once a week instead of two. Believe me, you want me to do well on my exams and then be able to share with you all the amazing nutritionish things I’ve learned.
Changing the subject now, a few months ago a nice lady wrote me an email admiring the blog and asked me to try her recipe of a Carrot Potage. I was finally able to make it last weekend since it seemed appropriate for the season and it was delicious! I gave it a check mark in terms of healthy/nutritious food and now I’m sharing it here on the blog. I even thought that anyone should actually feel free to do that too. Send me some of your favorite recipes and let me give them a try! If they pass the healthy-check-point I can even share them on the blog like today.

Serves 4-5. Time: 60 minutes.
-7 big carrots
-2 medium potatoes
-1/3 teaspoon ground ginger
-1 star anise
-1/3 teaspoon salt
-1/4 teaspoon pepper
-1 tablespoon olive oil
1. Dice all vegetables
2. Start by softening the onion with the olive oil in a big saucepan
3. Add the rest of the ingredients expect the star anise and cover with water. Stir every now and then.
4. After 30 minutes, add the star anise* to the mixture. Cook for 10-15 more minutes until all the veggies are softened. Then remove the star anise.
5. Blend the whole mixture by adjusting the water to your desired thickness.
6. Serve and enjoy!
