3 Homemade Healthy Pizzas

Yesterday we did a family lunch. Well, my brother was not here, but it’s ok...he was playing football with some friends, so he gets points for doing something healthy.

I’m so used to my house that I usually don’t appreciate how great it is. I’ll try to picture the image for you: Sunday - Pizza - Wood-fired oven - Warm weather - The garden – A pond – Some music - My beautiful dog Ulises – Le boyfriend – My parents.

Ok, maybe words are not enough. Let’s try with some pictures:

It was quite a nice afternoon.

We all cooked together, so I have to give special credits to my dad for preparing the wood-fired oven and the pizza dough, to my mom for doing the groceries and adding the pizza toppings and to le boyfriend for helping me cut the veggies (as usual!)

My favorite one was the caramelized onion and goat cheese pizza. But I think everyone preferred the Hawaiian one. We did half of the Hawaiian with turkey ham and the other half without it. My dad and I are both vegetarians, so we left half of it free of meat.  Let me know if you have a favorite one!

Quick note: not many of us have a wood-fired oven. So, for the cooking time in a normal oven I’ll just give an estimate.

Ingredients:
Per pizza:

For the dough:
¾ cup all purpose flour
¾ cup whole grain flour
¼ teaspoon salt
1 teaspoon yeast
2/3 cup warm water
1 tablespoon olive oil

For the toppings:

  • Veggie Pizza

-4 tablespoons of low-sodium tomato sauce
-3/4 cup shredded low-fat mozzarella cheese
-1/3 red pepper
-1/3 red onion
-1 tomato
-3/4 cup cut mushrooms
-Oregano to taste
  • Hawaiian Pizza
-4 tablespoons low-sodium tomato sauce
-3/4 cup shredded low-fat feta cheese
-1 tomato
-1 cup cut turkey ham
-1 cup cut pineapple
-Oregano to taste
  • Caramelized Onion Pizza
-3/4 cup goat cheese
-1/2 cup almonds
-1 tablespoon olive oil
-1/2 red onion
-1 tablespoon honey
-1 cup uncooked spinach

Kitchin-it!

For the dough:
1. Add the flours, salt and yeast in a big bowl. Mix.
2. Make a well in the middle and add the warm water and olive oil.  Mix  well until you have a soft dough. You might need to add a little more flour so that it is not too sticky.
3. Knead the dough in a lightly floured surface for about 10 minutes. (Great arm exercise!)
4. Put the dough in a lightly greased bowl and cover with plastic foil for about 1 hour to let it double in size.

5. Meanwhile, you can start cutting the veggies for the toppings.
6. After 1 hour, hit the dough against the lightly floured surface and knead again for about 3 minutes.
7. With the help of a roller, stretch the dough and make a thin round pizza base.

For the toppings:
Preheat oven to 250 ◦C.
  • Veggie Pizza:
1. In the order listed above, add the ingredients to the uncooked dough.
2. Bake for about 12 minutes or until the dough looks gold and firm. In a wood-fired oven, it’s about 10 minutes. Keep an eye on it!

  • Hawaiian Pizza:
1. In a grill, lightly grill the pineapple.
2. In the order listed above, add the ingredients to the uncooked dough.
3. Bake for about 12 minutes or until the dough looks gold and firm. In a wood-fired oven, it’s about 10 minutes. Keep an eye on it!

  • Caramelized Onion Pizza:
1. In a small pan, add the olive oil and heat in medium-high.
2. Add the onions and cook for about 8 minutes until soften.
3. Add the honey and keep stirring for about 3 more minutes.
4. In a separate pan, add the almonds and cook for a few minutes until lightly toasted.
5. Add the goat cheese, the toasted almonds, the caramelized onions and spinach to the pizza dough in that order.
6. Bake for about 12 minutes or until the dough looks gold and firm. In a wood-fired oven, it’s about 10 minutes. Keep an eye on it!

  1. Mmmmm buenísima pinta que tienen todas las pizzas, Raquel!!! La verdad, es que siempre me ha gustado mucho la pizza hawaiana pero donde se ponga una buena cebolla caramelizada que se quite lo demás... jejejeje.
