Quinoa bites - Bocados de Quinoa

So here's my first real post! I love quinoa and it has so many healthy benefits. It is high in protein, low in sodium and its iron content is way higher than any other cereal grain.

Fun fact about quinoa: even though many people mistake it for a grain, it’s actually a seed. But who cares? It looks like a grain and it acts like a grain!

They go great as a side dish and are really easy to make.

Y aquí esta mi primer post de verdad! La quínoa es una comida que amo y además tiene muchos beneficios para la salud. Es alta en proteína, baja en sodio y tiene mas hierro que otros granos.

Un dato curioso sobre la quínoa es que muchos creen que es un grano, pero en realidad es una semilla. Pero no importa! Parece un grano y actúa como un grano!

Es perfecta como acompañante y muy fácil de preparar

Start to finish: 40 minutes
For 28 bites, you need:

2 large eggs
2 cups of spinach (chopped)
2 tablespoons of whole wheat flour
¾ cup of shredded low-fat mozzarella cheese
2 shredded carrots
1 sweet bell pepper (chopped)
1 medium onion (chopped)
2 teaspoons of garlic
2 cups of cooked quinoa
Salt and pepper to taste

Tiempo: 40 minutos
Cantidad: 28 mini-tortitas

-2 huevos
-2 tazas de espinaca, picada
-2 cucharadas de harina de trigo integral
-3/4 taza de queso mozzarella bajo en grasa, rallado
-2 zanahorias, ralladas
-1 pimentón, picado
-1 cebolla mediana
-2 cucharaditas de ajo picado
-2 tazas de quínoa cocinada
-Sal y pimienta al gusto

1. Preheat oven to 350 degrees
2. Lightly spray olive oil in a baking tray
3. Mix all ingredients in a large bowl until thoroughly combined
4. Using a spoon, place drops of the mixture in the baking tray, about 1cm apart
5. Bake for 20 mins
6. Serve and enjoy!


1. Precalienta el horno a 350* F
2. Esparce un poco de aceite de oliva en una bandeja de horno
3. Mezcla todos los ingredientes en un bol grande hasta que este todo combinado
4. Con la ayuda de una cuchara, coloca porciones de la mezcla en la bandeja,  1 cm aparte una bola de la otra
5. Ornea por 20 minutes y estará listo para servir
6. Buen provecho!


  1. Thanks for this! What is interesting to note is that, at least while I was living in Bolivia and travelling around other Andean countries, quinoa was considered the food of those who didn't have a lot of money or wealth. Yet here, in Canada, quinoa is seen as something fancy, more high-end.

    Quick question: does quinoa have more or fewer carbs than pasta?

    1. Hi! Thanks for sharing that fact; it’s crazy that such a great food can be rejected by wealthy people.
      Regarding your question, the short answer is that pasta has more carbs than quinoa. Per portion, carbs account for about 80% of the total calories in pasta, whereas in quinoa, carbs account for about 67% of the total calories.

  3. Hi Raquel, question: Does Quinoa have gluten?
    Suggestion: it would be very helpful to receive from you some advices (and recipes too!) Gluten free, for alergic people like my 2 year old son..

    1. Hi Felipe, thank you for your comment! Regarding your question, quinoa does not contain any gluten. However, if you buy a prepared meal containing quinoa, you might want to check if it contains any carbs, which may in fact contain gluten, but quinoa itself does not. (One more reason to prepare meals at home!)
      I will try to post gluten-free meals and tips every time I can; I’ll inform it in the post.
